This canapé is a twist on the hummus dip with crudités you often see at parties. It is probably one of the fastest and easiest canapé to put together and many will have all the ingredients in the fridge already.
Buy the best quality olives you can and a good quality olive oil based hummus or you can make your own. It is best to assemble this just before service to keep the hummus fresh but won’t take more than a few minutes to do.

Ingredients
- 1 cucumber
- 200g hummus
- 32 black pitted olives
- Sesame Seeds – Optional
Method
Make hummus if doing so according to instructions
Slice the cucumber in to 32 equal portions (that is in half, in half again + 3 more times if doing it with a knife). If using a mandolin then aim for about 8/9 mm.
Slice the pitted black olives in half.
Place the hummus in to a piping bag, Nozzle shape is up to you. You can just use a teaspoon if you prefer.
Pipe equal amounts of the hummus on to each cucumber slice.
Decorate with a couple of black olive slices and sprinkle half of the canapé with sesame seeds and serve.
