Normally at Christmas people would be cutting biscuits in to stars but I wondered whether you could do it to flat breads to give these canapés a bit more of a festive feel. I certainly had fun making them and they tasted great if I do say so myself. You can use pre bought hummus and falafel in which case this recipe should only take about 15 minutes to knock up. If you fancy however making your own then follow the recipes for fafels and Hummus.

Serves: 20 canapé
5 a day: 1 per 4 canapé
Time: 15 minutes if using pre bought falafel and hummus
Ingredients
- 200g flat bread
- 200g mini falafel
- 200g hummus
Relish
- 1/2 red onion
- 8 baby plum tomatoes
- 1 small chilli
- 1 inch cucumber
Method
Make the Falafels and Hummus if doing so and refrigerate until needed.
Finely chop the relish ingredients and refrigerate until needed.
Warm the over to 160 C
Cut the flatbread in to bite sized pieces. I used a normal cookie cutter.
Warm through the falafel for 12 minutes. Meanwhile place the hummus in to a piping bag (you can use a teaspoon if you prefer)
Add the cut flatbread to the oven and toast for a few minutes only. They will brown very quickly so keep and eye on them. Remove flat breads and falafels as soon as golden brown.
Pipe a teaspoon sized amount of humus on to the flat bread. Top each one with half of a falafel and some relish. Serve immediately.

These are so pretty and festive I wouldn’t really care what’s on them!
